School’s out for summer here in Ireland and our boys are looking for baking projects in between the camps and trampoline time.

I like to think these jam donut muffins are the sort of thing you’d pull out of a paper bag on the walk home from school. Sugar on your fingers, jam squidging out the sides with every bite.

The one rule with muffins: don’t overmix. The batter should look a little bit unfinished, almost like you’ve stopped before it’s done. That’s the secret to a soft, tender crumb. Oh and top tip is the use the end of a wooden spoon to poke holes in the top so you can pipe in the jam of your choosing!
