Jam Donut Muffins
This one's a hit of nostalgia, like your favourite treat at the local bakery after school
School’s out for summer here in Ireland and our boys are looking for baking projects in between the camps and trampoline time.
I like to think these jam donut muffins are the sort of thing you’d pull out of a paper bag on the walk home from school. Sugar on your fingers, jam squidging out the sides with every bite.
The one rule with muffins: don’t overmix. The batter should look a little bit unfinished, almost like you’ve stopped before it’s done. That’s the secret to a soft, tender crumb. Oh and top tip is the use the end of a wooden spoon to poke holes in the top so you can pipe in the jam of your choosing!
The recipe is below and do let me know what you are cooking this summer!
