As the days stretch longer and the evenings hint at the warmth of summer to come, my home cooking begins to shift towards lighter fare, big on bold flavour. It’s a gradual transition, helped along by a recent trip to Los Angeles, which was a nice reminder of the joys of outdoor cooking and eating.

Quick to prepare and bursting with flavor, it’s a perfect go-to dinner on those evenings when inspiration eludes you.

Since we moved into our house last year we have done very little beyond establishing a vegetable patch and sorting out a chicken run. The garden is filled with gravel, so this year I’m focusing on reclaiming little spaces and creating a little more shape. I saw a concept on instagram called “chaos gardening” and I am fully on board. We have been sowing wildflowers in the patches, popping runner beans into pots to grow up walls and trying to fill out the spaces as much as we can. I’m hoping it will begin to provide a bit more intrigue to the outdoor space and more importantly provide more reason to be outside during the summer months!
