Over a decade ago, in the pages of Feast: A Dinner Journal, a magazine I created to showcase Irish food, we hosted an outdoor summer feast in the gardens of Howth Castle- a long table draped in crisp linen, summer air and platters of fresh, simple food passed around. Wildflowers tumbled across the table, echoes of laughter carried on the breeze, and the feast itself was a celebration of good company and seasonal ingredients.
That sense of community and good living is at the heart of Wind Shore Goods. It’s hard to believe it’s been over a decade since we gathered for this summer feast which formed part of our 2013 issue of my magazine Feast: A Dinner Journal, under the grand old trees at Howth Castle. The table was set with layers of mismatched china, flickering candles, and wildflowers picked fresh from the gardens. Plates overflowed with the best of the season: charred green peas glistening with Irish sea salt, bright salads of candy-striped beetroot and yellow courgette, tender goatsbridge trout resting on a bed of shaved fennel, and a showstopper of a cake layered with honeyed peaches and juicy plums.






Bowls of ice cream studded with lavender petals glowed like little moons in glass bowls wrapped with edible flowers. I’d love to tell you we lingered over every bite, relishing that golden evening light, sharing stories and laughter as the sun dipped below the castle walls- but the brilliant team worked tirelessly to capture these lovely settings- I have never taken more photographs on a single shoot!
Now, as summer returns, I’m craving that feeling of abundance and community once more- only this time, I’ll be reaching for Wind Shore Goods pantry essentials to set the table: our bright, peppery olive oils, Irish organic vinegars, and hand harvested sea salts that bring out the best in every bite.
